Avocado Pasta
This is a quick 15-minute meal that’s a recent addition to my recipe box. It makes 2 servings, which is perfect for a shared dinner or personal dinner-lunch combo. Since it has avocado, it does not reheat well, but I’ve discovered that I enjoy eating the cold leftovers. Pair with some garlic bread and you’re set.
- 6 oz noodles of choice (I’ve done penne and rotini)
- 1 medium avocado, pitted
- 1/2 small lemon, juiced (go easy, you can always add more to taste)
- 2 Tbs extra virgin olive oil
- 1/4 tsp garlic powder
- 1/2 tsp salt
While noodles are boiling, prepare the sauce. Use a food processor (or a spatula with a quick hand) to blend lemon juice, olive oil and garlic powder. Add avocado and blend until smooth. It will be a very pale green and slightly un-yummy looking, but it really is good. Trust me. When noodles are done, drain, then add noodles back to stove pot and mix in prepared sauce. Top with black pepper and serve warm.
