Cheap, Easy Meals 101 (Chapter 5)

Cream Cheese Quesadillas

Thanks to my 7th grade home economics class, I have enjoyed this easy recipe over and over again. This works as a side dish or main meal.

  • 4 large tortillas
  • 8 oz block cream cheese, softened
  • 4 oz can chopped green chilies, lightly drained
  • 1 cup shredded cheese
  • Salsa

Mix together cream cheese and chilies. Put one tortilla on a microwaveable plate. Spread ¼ of the cream cheese mix on to the tortilla. Sprinkle with ¼ cup cheese. Repeat with the remaining 3 tortillas, layering each one on top of the other. Top the fourth layer with a few spoonfuls of salsa. Cover with a paper towel and microwave for 45 seconds.

You can personalize this by adding black olives or shredded chicken to make it a bit heartier. Or, if you’re looking for a small snack, use 4 small tortillas and halve the rest of the ingredients (I still use the full can of chilies).
